I love Goan Roast Beef / Beef Assado from my childhood which was prepared by my mom and I learnt this tasty recipe from her. Mostly prepare this beef roast in pressure cooker, as it consumes less time.
This meat roast recipe is a delicious dish where sandwiches can be made or further used to prepare roast beef chilli fry. This beef roast goan style is my favorite dish. Prepared very perfectly with tender meat. Also the roast beef can be served with french fries, side dishes and used in roast beef sandwich for picnics.

Ingredients
For Goan Beef Roast Marination
- 4 tbsp ginger garlic paste
- 1 tsp turmeric powder
- 5 tbsp vinegar
- salt (as required)
For Goan Roast Beef
- 1Â kg beef (undercut)
- 2Â sliced onions sliced
- 2Â red kashmiri chillies (half broken)
- 10Â cloves
- 2Â inch cinnamon stick
- 10Â peppercorns
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 2Â green chillies (sliced)
- 2 in tamarind balls (marble size) (soaked in water)
- 4 tbsp oil
- 1 cup water
Instructions
- For goan roast beef, nicely wash the beef and cut it into 4 -5 big pieces for Goan Roast Beef / Beef Assado in pressure cooker
- Now the pierce the meat pieces with the fork all over, so that the masala penetrates in the meat for better taste.
- Now take the goan beef roast marination ingredients mentioned above and rub it all over the meat and marinate for 3 – 4 hours or keeping in the fridge for overnight would be much better.
- Heat oil in the pressure oil, fry the sliced onions till slightly brown
- Add the broken red chillies and fry for 1 mins
- Then add cloves, cinnamon, peppercorns, cumin seeds, turmeric powder and fry for another minute
- Then add the green chillies along with the meat and cook, till the meat becomes brown on all sides
- Then add the tamarind water and little more water if required, and pressure cook the meat for 3-4 whistles, where the goan roast beef in cooker will becomes tender
- Then open the cooker by releasing the steam, and further cook it adjusting the salt, gravy thickness, and the meat tenderness.
- After getting cooked, get the meat to the room temperature and make slices, then put slices back to gravy and further cook till the gravy is covered and absorbed in the meat
- And finally the Goan Beef Roast / Beef Assado is ready and you can make roast beef sandwich or Beef Chilli Fry of this cooked beef roast goan style
