Description

Goan Pork Roast Recipe / Pork Asado Recipe is cooked at all occasions in goa and very popular roast pork recipe originated from the Portuguese which was called Assado de Porco. Ingredients

Scale
  • 1 kg pork boneless piece (without fat and skin)
  • 2 onions chopped (medium size)
  • 3 tbps oil
  • 1–2 cups water

For Marinate

  • 3 tbsp ginger garlic paste
  • 1/2 tsp turmeric powder (haldi)
  • 2 – 3 tbsp vinegar (mostly used palm vinegar (if not cider vinegar))
  • salt to taste

For Roasting

  • 3 dry kashmiri chillies
  • 2 green caradomons
  • 2.5 inch cinnamon sticks
  • 10 black peppercorns
  • 1/2 tsp cumin seeds
  • 8 cloves
  • 1 bay leaf

Instructions

  1. Wash the pork and cut it into medium size pieces.
  2. Apply the ingredients in the marinate and keep it aside for 3 to 4 hours or overnight.
  3. Take the kadai / pan add 1 tbsp oil to it and add the chopped onions and cook till it becomes transparent and keep aside.
  4. Then add the 2 tbsp oil oil to add the ingredients for roasting and fry for a few seconds
  5. Now add the fried onions to this , mix well and fry for another few seconds
  6. Next add the marinated meat, mix well and cook for a 2-3 minutes.
  7. Now add 1 cup water (or more as required) and stir it.
  8. Now close the kadai / pan and cook on medium heat for 20 minutes.
  9. After 20 minutes turn the meat pieces and cook for another 20 minutes with the lid closed.
  10. Add little water if needed.
  11. Then check the meat if it is cooked, if needed cook the pork roast till it is done.
  12. Let the goan pork roast cool naturally, and cut the meat into thin slices .
  13. Now serve the pork asado with gravy on it or aside, with pulav, any salad and fried potatoes.
