Description

Goan Pork Sorpotel Recipe is a very common Goan sorpotel cooked at weddings, parties, festivals and different occasions. It is always better to cook 1 or 2 days before the occasions and then serve, to get better taste. All people in Goa love to cook sorpotel goan style for any occasion, all it is the best tasty Goan Sorpotel Dish.


Ingredients

Scale
  • 1 kg Pork
  • 1/4 kg Liver (pork liver / beef liver)
  • 3 large onions finely chopped
  • 1 tbsp sugar / jaggery for taste
  • 6 tbsp cooking oil
  • salt

Grinding

  • 4 inch cinnamon stick
  • 2 tsp cumin seeds
  • 20 red kashmiri chillies
  • 18 Black Pepper Corns
  • 18 cloves
  • 6 tbsp ginger garlic paste
  • 22 Dry red Kashmiri chillies (for the red color)
  • 1/2 tsp tumeric powder
  • 2 tbsp tamarind extract
  • vinegar (as required to grind paste)

Instructions

  1. Lightly roast the dry ingredients in grinding and then grind them with other ingredients in grinding and keep aside.
  2. Rinse the jar used for grinding with water and keep the water aside.
  3. Boil the pork and liver in water on low heat for about 20 minutes with 1 tbsp vinegar and drain the water and keep aside
  4. Chop the pork and liver to small cubes.
  5. Heat the oil and fry onions till they become golden brown
  6. Then add the sorpotel grinded masala and fry for another 3 minutes.
  7. Then add the meat that is kept aside and fry well for another 4 minutes
  8. Add the water that was kept aside and the grinding water with the sugar / jaggery and mix well
  9. Cook on low heat till the gravy thicken for about 30 to 40 minutes
  10. Taste it and add vinegar or sugar as required
  11. Cook for another 5 minutes and Goan Pork Sorpotel is ready

Notes

  • It is better to keep the cooked sorpotel for atleast 1 day before serving to get better taste.
