Description

Ingredients

  • 1/4 cup candied orange and lemon peels chopped
  • 1/4 cup seedless dates chopped
  • 1/2 cup cashew nuts chopped
  • 1/4 cup currants chopped
  • 1/4 cup raisins chopped
  • 2 tbsp brandy
  • 2 tbsp lemon juice
  • 1/4 refined flour
  • 1/4 tsp cinnamon powder
  • 1/4 tsp clove powder
  • 1/4 tsp nutmug powder
  • 1 cup +1/2fresh white bread crumbs
  • 6 tbsp butter
  • 3/4 cup brown sugar
  • 2 eggs beaten
  • 3 cups water

Instructions

  1. Mix well orange and lemon peel, dates, cashew nuts, currants, raisins, brandy and lemon juice.
  2. Sift together flour, cinnamon, clove and nutmeg powders, Mix in breadcrumbs.
  3. Mix butter and sugar. Beat till light and fluffy. Gradually add eggs, beating well after each addition. Fold in prepared flour and fruits and nuts mixtures.
  4. Spoon the mixture into a greased 1 liter mold, Cover mold tightly with grease-proof paper or aluminum foil securely tied.
  5. Spoon the mixture in to the greased pudding basin, gently putting the mixture . Cover the mold tightly with grease proof paper or aluminum foil securely tied.
  6. Place the pudding mold in the steamer filled half with water. Steam the pudding for 2.5 hours – 3 hours Check the water level frequently, the water should not dry. (You can check if the pudding is ready by piercing the toothpick and see if it comes out clean)
  7. Remove the pudding from the steamer, and let it cool naturally.
  8. Remove the wrappings and again wrap it tightly in new grease proof paper and aluminum foil. keep it at cool place till Christmas,
  9. Before serving again steam it for one hour, then cut the Xmas Pudding into small portions.
  10. Serve Christmas Steamed Pudding with brandy sauce or custard or ice cream.
