- 1 cup fresh grated coconut
- 1 cup sugar powdered
- 10 whole cashew nuts grinded
- 1/2 cup milk
- 3 tablespoons butter
- 1/2 teaspoon rose essence
- few drops rose color
Instructions

To prepare goan coconut toffee, take the grated coconut, grinded sugar, grinded cashew nuts and mix them well.

Add this grinded mixture to the frying pan (nonstick preferred) with the 2 tablespoons butter, And mix them on low heat. Keeping stirring regularly till sugar completely dissolves. Then keep stirring on low flame till the mixture color changes and starts leaving the sides of the pan.

Now add the red color, essence, and butter (remaining) to the mixture and stir well. Keep stirring on low flame for another 2 – 3 minutes, till the color is well mixed. If necessary little more color can be added.

Transfer this mixture to a greased tray and then flatten it with your hand. If necessary use the baton to flatten it to an even surface.

Then let it cool and cut them into diamond shapes and keep them dry. Finally the goan rose coconut toffee or coconut cordial to ready. Store this sweets in a container.
