Rajasthan is a region covered by deserts and having lack of vegetable. Due to this vegetable scarcity, people rely on dishes made from milk butter, ghee and other food items. Here in this situation Rajasthani gatte ki sabzi is a very commonly prepared in this state.
What is Gatte Ki Sabzi?
Gatte ki Sabji is a very common and traditional Rajasthani Curry recipe. It is also called besan ke gatte ki sabzi a popular Indian curry prepared with gram flour (besan), curds, and spices.
Here Gatte means Gram Flour (chickpea) Dumplings which are boiled, then slightly fried. They are added to a curd based gravy and simmered. Any spices available in the kitchen can be used for this besan ki sabji recipe.
How To Make Gatte Ki Sabji In Rajasthani Style
- To make besan ke gatte, first, mix all ingredients in besan gatte. Sieve them into a soft dough. Divide the dough into equal parts, and roll each ball into a 1-inch cylindrical shape.
- Boil some water in the pan. Add these cylindrical shape rolls to it. Boil them for 10 – 15 minutes or till they float up. Remove them from the water and cut them into 1/2 inch gatte (dumplings). Keep the water aside for further use. Take 1 tablespoon oil and shallow fry the gatte (dumplings) till they become light brown.
- Make Gatte Sabzi Gravy, first heat 1 tablespoon oil in the pan, and add mustard seeds. As the mustard seeds start crackling add cumin seeds, asafetida, chopped ginger, and finely chopped chillies. Saute for 20 – 30 seconds. Add the chopped onions and fry till they get transparent. Add all the spices (coriander powder, red chilli powder, garam masala powder ) and fry for another 30 – 40 seconds.
- Mix the curds and cook till the oil separates ( 2 – 3 minutes). Finally, add 1 cup water with salt (that was previously kept aside while making besan ke gatte) . Bring to a boil and add the besan ke gatte previously prepared and cook for 3 – 4 minutes. (more water can be added if necessary). Rajasthani gatte ki sabji is ready, garnish with chopped coriander leaves before serving.
What To Serve With Besan Ki Sabji
Rajasthani besan ke gatte ki sabzi is mostly served with roti or parathas or phulkas. This besan ki sabji also goes well with steamed rice or jeera rice. It can be served with naans or breads also.

Ingredients
For Besan Gatte (Gram Flour Dumplings)
- 1 cup besan gram Flour
- baking soda (small pinch)
- 1 teaspoon salt
- 1/2 teaspoon carom seeds (ajwain)
- 1/2 teaspoon turmeric
- 1/2 teaspoon red chilli powder
- 1/2 teaspoon cumin powder (jeera)
- 1/2 teaspoon fennel seeds powder (saunf)
- 1 tsp coriander powder
- 1/2 teaspoon ginger paste
- 1/2 teaspoon green chilli paste
- 3 teaspoons fresh cream
- 3 tablespoons fresh curds dahi
For Gatte ki Gravy
- 1/2 teaspoon Mustard Seeds
- 1/2 teaspoon cumin seeds
- asafetida (pinch)
- 1/2 tablespoon ginger (finely chopped)
- 1 green chilli (finely chopped)
- 1 medium onion (finely chopped)
- 1 teaspoon coriander powder
- 1/2 teaspoon red chilli powder
- 1/2 teaspoon garam masala powder
- 1 small tomato chopped
- 1/2 cup curds / yogurt
- 2 tablespoons ghee / oil
- salt to taste
- coriander leaves chopped (garnishing)
Instructions
Make Besan Ke Gatte (Dumplings)
- For Besan Ke Gatte, first mix the ingredients in besan gatte and sieve it to soft dough.
- Divide the dough into equal balls, grease your hand with oil and then roll each ball into 1 inch cylindrical shape.
- In a pan boil some water and then add these gatte (dumplings) and boil them to nearly 10 – 15 minutes or till they float up.
- Then remove them from water and cut the gatte (dumplings) into 1/2 inch pieces, and keep the water aside.
- Take 1 tbsp oil and shallow fry these gatte (dumplings) till they become light brown.
Making Gatte ki Sabzi Gravy
- To make gatte ki sabji, first heat 1 tablespoon oil in the pan. Add mustard seeds.
- When the mustard seeds starts crackling add Cumin Seeds, asafetida, chopped ginger and finely chopped green chillies. Saute for 20 – 30 seconds.
- Then add the chopped onions and fry till they become transparent.
- Then add the coriander powder, red chilli powder, garam masala powder and fry for another 30-40 seconds.
- Then add the curds and cook till the oil separates (approx. 2-3 minutes)
- Then add 1 cup water that was kept aside with salt and bring to boil .
- When it starts boiling, add the gatte (dumplings) prepared previously to it , cook it for 3-4 minutes. More water can be added.
- Finally, Rajasthani Gatte ki Sabzi is ready, garnish it with chopped coriander leaves before serving.
Notes
- while making besan ke gatte extra curds can be added if necessary
- Â pinch of baking soda helps to make soft gatta.
- better to keep cooked gatta with water (to avoid becoming dry)
