Goan Chana Doce / Chonya Doce Recipe is a soft and sweet fudge a very delicious Goan dessert. It’s one of the popular traditional Goan Christmas sweets called kuswar. Chana Dal Fudge is prepared with simple ingredients like chana dal (split Bengal gram), grated coconut, sugar, and cardamons (for flavoring). Making doce consumes time and effort, and the end results in a tasty Goan sweet dosh.

In this Portuguese Doce De Grao Goan recipe, Doce means sweet and Grao means wheat/grain. So it’s a Goan sweet dish called Doce. This goan doce is also called chonya doce, dos, dosh, goan chana doce, chana dal doce, doce sweet, goan coconut doce or chana dal fudge.

Doce De grao or goan doce is a very common sweet dish prepared for Christmas and weddings and shared with neighbors and relatives. This is also a traditional Goan wedding doce mostly prepared at home and sent to the groom’s place. Then this doce sweet is further distributed with relatives and neighbors.

Tips For Making Best Goan Doce Sweet

  • To save time, it is better to soak the lentils (dal) overnight. It makes the dal more soft and meshy.
  • If not pressure cooker the lentils (dal) can be cooked on the stovetop with water.
  • Apply grease on the cutting knife to get the doce with a clean finish. And also grease the surface before pudding the hot mixture.
  • Make the design on the doce, while the mixture is still hot.
  • It is better to use a long wooden spoon for the mixture to avoid coming on the hand or getting stuck to the pan.
  • While making Chana Dal Fudge, it is better to use desiccated coconut as it makes stirring easier, and grated coconut makes it tastier.

Ingredients For Goan Coconut Doce

This Doce De Grao / Goan Chana Dal Fudge is prepared with simple ingredients available in the markets.

  • chana dal/split Bengal gram
  • grated coconut / desiccated coconut
  • sugar (granulated)
  • ghee
  • cardamon powder
  • salt

How To Make Goan Sweet Doce

  1. To Make Doce Goan Sweet, wash and soak the chana dal in water for at least 2 – 3 hours. Cook the dal in the pressure cooker for 3 whistles with little water OR cook on the stovetop with water till it gets soft. Let the dal cool down then drain it. Reserve the cooked dal’s water for further use. Grind the cooked chana dal to a smooth paste. Transfer the dal paste to a heavy bottom dry pan/wok.
  2. Grate the white portion of the coconut. And, grind the grated coconut to a smooth, fine, and thick paste with little reserved water. Transfer the coconut paste to the pan along with the dal paste. Add the sugar and a little salt pinch. Mix them very well.
  3. Keep the pan on medium heat. Stir continuously with a flat wooden spoon. Keep stirring for nearly 20 minutes, or until it starts thickening. Add ghee and cardamom powder, and mix well. Now lower the heat, and stir continuously (clockwise and anticlockwise direction).
  4. Continue stirring till the mixture thickens and starts leaving the pan’s side. It should form together like a ball. This takes nearly 30 – 40 minutes. Turn off the heat, the Goan Coconut Doce is ready.
  5. Finally grease the wooden board, and transfer the hot mixture on it. Spread the mixture to 1/2 inch thickness, with a greased rolling pin. Let the mixture cool slightly. Cut Goan Chana Dal Doce / Doce De Grao into diamond shapes with a greased knife. Let Goan Doce cool completely and then it’s ready to store or serve.

Ingredients

  • 250 grams (1 cup)  chana dal / spilit bengal gram
  • 1 grated coconut (approx. 300 grams) / 200 grams desiccated coconut
  • 400 grams (2 cups) granulated sugar
  • 1 + 1/2 tablespoon ghee
  • 1/2 teaspoon cardamom powder
  • pinch of salt

Instructions

  1. For Goan Chana Doce, rinse and soak the chana dal in water for at least 2 – 3 hours. Cook the dal in the pressure cooker for 3 whistles with enough water. Let the dal cool down then drain it. Reserve the cooked dal’s water for further use.
  2. Grind the cooked chana dal to a smooth paste. Transfer the dal paste to a heavy bottom dry pan/wok.
  3. Grind the grated coconut to a smooth, fine, and thick paste with little reserved water. Transfer the coconut paste to the pan along with the dal paste. Add the sugar and a little salt pinch. Mix them very well.
  4. On medium heat, keep the pan and stir continuously with a flat wooden spoon. Keep stirring for nearly 20 minutes or until it starts thickening.
  5. Add ghee and cardamom powder, and mix well. On lower heat, stir continuously (clockwise and anticlockwise direction).
  6. Continue stirring till the mixture thickens and starts leaving the pan’s side. It should form together like a ball. It takes nearly 30 – 35 minutes. Turn off the heat, the Goan Coconut Doce is ready.
  7. FInally grease the wooden board, and transfer the hot mixture on it. Spread the mixture to 1/2 inch thickness, with a greased rolling pin. Let it get cooled slightly for 10 minutes.
  8.  Cut Goan Chana Dal Doce / Doce De Grao into diamond shapes with greased knife. Let Goan Doce Sweet cool completely and then it’s ready to store or serve.

Notes

  • the dal can also be cooked on the stovetop with water till it gets soft.
  • it is better to use a wooden spoon while preparing the goan coconut doce
  • can make the design on the doce using the fork.
  • making goan doce with dessiccated coconut makes stirring easier, but the grated coconut tastes better
  • it is better to stir continuously to avoid the doce mixture burning and sticking to the pan.
