Ingredients

- 750 g mutton cut into pieces
- 1 cup oil
- 1/4 kg potatoes peeled and cut into quaters
- 1 1/2 tsp salt
For Marinate
- 20 grams ginger
- 16 flakes garlic
- 6 green chillies
- 100 g tomatoes chopped
- 1 tbsp salt
- 1 1/2 tbsp red chilli powder
- 2 tbsp coriander leaves chopped
- 2 tbsp mint leaves chopped
- 1 1/2 tbsp garam masala
- 1 tbsp Cumin Powder
- 1 cup curds beaten
For Rice
- 2 + 1/2 cups Rice (cook that rice 3/4)
- 1/4 cup milk
- 2 green cardomons
- 1/4 tsp caraway seeds
Instructions
For Marination
- To make Mughlai Mutton Biryani Grind together ginger, garlic and chillies into paste
- Rub the paste to meat. Add all the ingredients for marinade and mix well.
- Keep aside for 4 hrs or for midnight
Cooking
- In frying pan heat oil for about 5 mins. Lightly fry the potatoes and add to marinated meat and mix well
- Also fry the onions in 2 batches with 3/4 tsp salt till onions are golden brown and crisp. Remove the onions drain the excess oil and mix with the marinated meat.
- Heat 7 tbsp ghee in the cooker mix meat and 1/4 cup water mix well.
- Keep meat on one side of cooker and rice on the other side
- In a pan, heat remaining ghee for a minute and fry caradomons and caraway seeds and pour over rice
- Close the cooker and cook for 20 mins
- After the cooker is cooled naturally , serve Mughlai Mutton Biryani with raita.
