How Long To Roast A Whole Chicken In The Oven
In general basic rule of thumb to roast chicken in oven at 180°C (350°F) will take nearly 20 minutes per pound (450 grams) of chicken.
For this recipe of chicken roast goan style , it will take around 1 hour 20 minutes to roast at 180° C . It is better to check internal temperature of chicken, it should be 75°C. Another 10 – 15 minutes is needed for the chicken skin to get golden brown.
How To Make Roasted Chicken In Oven
- For Goan Chicken Roast: First clean the whole chicken and remove the unwanted internals from it. Take the whole chicken, wash it nicely from inside and out.
- For Roasted Chicken Marination: Now, take all the ingredients mentioned (ginger garlic paste, red chilli powder, fresh grounded black pepper powder, turmeric powder, lime juice, and salt). Make smooth paste by mixing the necessary oil. Take oil and pepper and brush on the chicken skin. Apply the mixed smooth paste to the chicken and inside the chicken. Apply the paste all over very well. Cover the chicken with foil. Keep it in the refrigerator for 4 hours atleast (or overnight)
- For Roasting: Next, preheat the oven to 200° C for atleast 10 minutes. Put the chicken on the roasting tray with the potatoes and pour the juices of the marination. Brush more oil into the chicken. Reduce the heat to 180° C. Baste and flip your chicken every 15 minutes or so, cooking it for 1 hour 15 minutes. Roast till the internal temperature reaches 75° C. Then continue cooking till the skin gets golden brown. The homemade roasted chicken in oven is done, it is ready to slice and serve as a side dish.

Ingredients
- 1 whole chicken with skin approx 1 kg
- oil
- 1 tsp black pepper powder
- 3 medium sized potatoes cut into quarters
Roasted Chicken Marination
- 4 tbsp ginger garlic paste
- 1 tsp red chilli powder
- 1 tsp black pepper powder freshly grounded
- 1/2 tsp turmeric powder
- 1 lime juice
- oil for making the paste
- salt
Instructions
- Remove the all the unwanted internals from the whole chicken.
- Nicely wash the whole chicken from both inside and outside very well.
- Mix the Roasted Chicken Marination ingredients with the necessary oil to make smooth paste
- Brush the chicken skin with oil and pepper
- Apply and rub the mixed ingredients on the chicken and inside the chicken very well
- Cover and place it in the fridge atleastfor 4 hours (or overnight).
- Preheat the oven 200° C for atleast 10 minutes
- Place the chicken on the roasting tray with potatoes, pour the juices of the marination left and brush more oil to the chicken.
- Reduce the heat down to 180° C
- Cook the chicken for about 1 hour 15 minutes, by basting and flipping the chicken when it reaches halfway.
- Continue cooking till the skin becomes golden brown.
- Goan Roast Chicken In Oven is ready and can be sliced. Served as a side dish with salad or fried potatoes.
