Murgi Ma Kaju / Kaju Ni Marghi is a very delicious and tasty chicken dish cooked in Parsi Style. In this dish cashew nuts are used to get that taste. This Indian cashew chicken is also prepared at Parsi Festivals. Very nice dish to serve to guest and any occasion in your house. This parsi cashew chicken is prepared with cashew paste which gives the main taste to the murgi ma kaju / kaju ni marghi (cashew chicken recipe).

This chicken with cashew in Parsi Style is our family’s favorite chicken dish. We mostly prepare it for festive occasions. It is an easy & simple delicious Indian chicken recipe.

How To Make Chicken With Cashew in Parsi Style

  1. To Make Parsi Cashew Chicken (Murgi Ma Kaju), first grind together ginger and garlic into a paste and apply it on the chicken. Then marinate it for atleast 1 hour. Then grind together chillies, cumin seeds to a paste with little water (used while soaking) from time to time. Take the cashew nuts seperately and grind them to a paste, using little water from time to time.
  2. Take the cooker, heat oil for nearly 3 minutes. Add onions and fry till golden brown. Add chili paste, and stir fry for 3 minutes. Then add the chicken and stir fry for about 10 minutes. Finally add the remaining water (1 cup) with salt and stir well.
  3. Close the cooker. Bring the pressure on hight heat. Reduce the heat and cook for 5 mins. Remove cooker from heat and allow to cool naturally. Open the cooker and place cooker with chicken on high heat. Stir in cashewnut paste, tomato ketchup and sugar.
  4. Cook till gravy thicken (for approximatey 2 minutes) stirring constantly. Serve this delicious Chicken with cashew in Parsi Style (Kaju Ni Marghi) for dinner.

What to Serve With Murgi Ma Kaju (Parsi Style Cashew Chicken)

Ingredients

Scale
  • 10 grams ginger
  • 10 garlic cloves
  • 1 + 1/2 kilograms  chicken pieces
  • 10 dry red kashimir chillies (soaked in 1/2 cup hot water for 15 minutes)
  • 1 teaspoons cumin seeds
  • 1/2 cup cashew nuts (broken to pieces)
  • 1 + 1/2 cup water
  • 1 cup vegetable oil
  • 250 grams sliced onions
  • salt (as required)
  • 3 tablespoons tomato ketchup
  • 1 teaspoon sugar

Instructions

  1. For Chicken with Cashew, grind together ginger and garlic into a paste and rub on chicken. Allow marinating for about 1 hour.
  2. Grind together chillies and cumin seeds into a paste, adding a little water in which chillies were soaked, from time to time
  3. Seperately grind cashew nuts into a paste, adding a little water (1/2 cup) from time to time
  4. Heat oil in cooker for about 3 minutes. Add onions and fry till golden brown.
  5. Add chilli paste. Stir and fry for about 3 mins.
  6. Add Chicken. Fry for about 10 mins.
  7. Add salt and remaining water (1 cup). Mix well.
  8. Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 5 mins
  9. Remove cooker from heat. Allow to cool naturally
  10. Open cooker. Place cooker with chicken on high heat. Stir in cashewnut paste, tomato ketchup and sugar
  11. Cook till gravy thickens (approx 2 mins). stirring constantly. Serve the Murgi Ma Kaju / Kaju Ni Marghi (cashew chicken) hot.
